- 1 cup of milk
- 1 cup oil
- 1 cup of sugar
- 1 egg
- 1 cup of flour
- 1 teaspoon of baking powder
Preheat oven to 400 degrees
Mix everything in a bowl, then take a pan and spray the pan with non-stick cooking spray.
Next, mix contents together and pour into the pan.
Put pan in the oven and let cooks for 30 minutes at 400 degrees.
Remove pan from oven and let cool.

1 sheet frozen puff pastry, thawed
Filling (pastry cream)
1 & 1/2 cups milk

pinch of salt
1 teaspoon vanilla extract
2 tablespoons cornstarch
3 egg yolks, beaten
1 tablespoon butter
1 cup dulce de leche

For the Pastry:
Preheat the oven to 400F
Line 2 baking sheets with parchment paper and set aside.
Cut pastry into 3 strips along fold marks. Place on a baking sheet and poke a few holes in each pastry with a fork. Bake for 15 minutes or until golden.
Remove from baking sheets and let cool on a rack.

For the Filling:
Pour milk in a medium saucepan and bring to a simmer.
In another small bowl stir together the sugar, cornstarch, and salt.
Gradually add the cornstarch mixture to the milk and cook for about 6 minutes or until it thickens, stirring often
Whisk in the yolks and cook for about 2 minutes more, stirring often.
Stir in butter and vanilla extract and remove from heat.
Allow mixture to cool to room temperature, cover and refrigerate until ready to use.

To Assemble:
Using a fork, split each pastry into 2 layers.
Spread pastry cream on 1 pastry layer
Repeat layers.
Top with Dulce de Leche.


Chokladbollar Som pa Konditori
4 ounces of butter
1/2 cup sugar
10 ounces of oats
2 tablespoons cocoa
1 ounce grated dark chocolate
1 tablespoon vanilla extract or 1 teaspoon of vanilla powder
1 tablespoon cold coffee
Grated coconut

Mix all ingredients together in a large bowl.
Take a large spoon full of mixture and roll into a ball
Roll ball through coconut and place on a tray or large plate
Repeat until all mixture is used up.
Put plate/baking sheet/or tray in the fridge until firm.
Serve cold.


Cactus Salad
1/2 lb. chopped cactus
1/2 onion
1piece of garlic
1/2 chopped onion
2 chopped tomatoes
fist full of cilantro chopped
The juice of 3 limes
salt and pepper
Boil the chopped cactus with half onion and piece of garlic.
Mix the chopped onion, tomatoes, and cilantro with the juice of the limes, add cactus. Salt and pepper according to your taste.

Lois' Chicken Enchilada Casserole
Big bag of nacho cheese Doritos
28 oz can enchilada sauce
1 can cream of chicken soup
13 oz can chicken breast in water
1 can Rotel
1 can diced green chilis
1 onion - diced
2 lbs shredded sharp cheddar cheese
1-2 tablespoons minced garlic
Lowery's garlic salt - to taste
13x9 inch baking pan

Mix all ingredients as directed into baking pan
Crumble chicken into baking pan
Add soup (no water) and mix well
Add onions, green chilis and Rotel and mix well
Add enchilada sauce and mix well
Smash Doritos and stir into mixture in baking pan - coat well
Add 3/4 of shredded cheese and mix well
Top mixture in baking pan with remaining cheese - DO NOT MIX

Bake at 350F for 1 hour until cheese is bubbling
Can be served with lettuce, diced tomatoes, onions, sour cream, guacamole and wrapped in a tortilla.

2 cups flour
1 cup water
1 generous pinch of salt
1 handful of baking powder
1 scoop of lard

In a bowl whisk all dry ingredients together
Mix lard in with dry ingredients
Make a small hole in the center of mixture in the bowl
Pour water into the hole and then mix together
Kneed dough and let sit for 3 minutes
Make 6 balls out of the dough and roll each out with a rolling pin
Butter a pan and put one tortilla into pan at a time
Cook and enjoy.
